We are looking for an experienced Senior Chef specialising in Shaanxi cuisine to join our restaurant team. The ideal candidate should have strong hands-on cooking skills, a good understanding of traditional Shaanxi flavours, and the ability to develop new dishes while maintaining food quality and controlling costs.
Key Responsibilities
- Prepare authentic Shaanxi-style dishes , especially Biang Biang Noodles and Lamb Paomo (羊肉泡馍) .
- Handle daily kitchen preparation, including meat, vegetables, noodles, soup bases, spices, and other ingredients.
- Prepare and standardise sauces, seasonings, marinades, and soup bases to ensure consistent taste and quality.
- Prepare a variety of Chinese cold dishes and appetisers (凉菜) .
- Prepare and cook Chinese-style grilled skewers (烤串) , including marinating, seasoning, and grilling.
- Maintain consistent food quality, portion sizes, presentation, and hygiene standards.
- Develop and test new dishes and menu items according to customer preferences and restaurant requirements.
- Monitor ingredient usage, reduce food wastage, and assist with food cost and portion control .
- Assist with inventory management, stock planning, and kitchen purchasing requirements.
- Communicate effectively with kitchen staff, service staff, and management to ensure smooth daily operations.
- Train and guide junior kitchen staff on food preparation, cooking techniques, recipes, and kitchen procedures.
- Maintain cleanliness, food safety, and proper kitchen organisation at all times.
Requirements
- Proven experience in Shaanxi cuisine or Northwestern Chinese cuisine .
- Strong skills in preparing Biang Biang Noodles, Lamb Paomo, cold dishes, sauces, and grilled skewers .
- Good knowledge of ingredient preparation, seasoning, and traditional Chinese cooking techniques.
- Ability to independently manage food preparation and cooking during busy service periods.
- Strong awareness of food costing, portion control, and waste reduction .
- Ability to develop and introduce new dishes.
- Good communication and teamwork skills.
- Responsible, organised, and able to work efficiently in a fast-paced restaurant environment.
