Sommelier (Junior to Head Sommelier) – Pre-Opening

Join our newest pre-opening concept in Dempsey Hill as part of our founding sommelier team. Inspired by contemporary Asian dining and rooted in premium Chinese ingredients, this casual upscale destination offers an immersive dining experience surrounded by lush greenery, with thoughtfully designed indoor and outdoor spaces where exceptional hospitality and memorable moments come together.
We are currently hiring for Head Sommelier, Assistant Head Sommelier, Sommelier, and Junior Sommelier positions. Whether you are an emerging wine professional looking to develop your craft or an experienced wine leader ready to shape an ambitious beverage programme, we would love to hear from you.
As a Sommelier, you will play a key role in creating exceptional guest experiences through thoughtful wine recommendations, impeccable service, and a deep understanding of our beverage programme. Responsibilities will vary according to experience and position level.
What You’ll Be Doing
Deliver exceptional wine and beverage service while maintaining consistently high standards of hospitality.
Provide thoughtful wine recommendations tailored to guests’ preferences and menu selections.
Present, open, decant, and serve wines with confidence and professionalism.
Create memorable dining experiences through beverage storytelling and genuine hospitality.
Maintain comprehensive knowledge of the wine list, producers, regions, vintages, and styles.
Participate in ongoing wine education and tasting sessions led by our Wine Director, Roberto Duran (MS Sommelier) .
Confidently share wine knowledge with guests and team members.
Assist with receiving, storing, organising, and maintaining the restaurant’s wine inventory.
Maintain accurate stock records and support regular stock counts, audits, and stock rotation.
Work closely with restaurant management and service teams to ensure seamless beverage operations.
Contribute to a positive, professional, and high-performing workplace culture.
Support team training and development initiatives.
Leadership Responsibilities
Mentor and develop junior members of the sommelier team.
Support the daily management and operations of the beverage programme.
Assist with wine purchasing, supplier relationships, and wine list development.
Drive beverage sales performance and profitability.
Uphold service excellence and operational consistency.
Additional Responsibilities – Head Sommelier
Lead the overall wine programme and beverage strategy.
Curate and maintain an exciting and well-balanced wine list.
Manage purchasing budgets and supplier partnerships.
Develop wine pairings and bespoke guest experiences.
Lead recruitment, training, and performance management for the sommelier team.
We’re Looking for Someone Who
Has a genuine passion for wine, hospitality, and delivering exceptional guest experiences.
Has previous experience in a restaurant, luxury hospitality, or fine dining environment.
Possesses strong communication and interpersonal skills with the ability to engage confidently with guests.
Has a strong interest in continuously developing their wine knowledge and service skills.
Is detail-oriented, professional, and committed to maintaining high service standards.
Can work collaboratively in a fast-paced and high-performing restaurant environment.
Mandarin proficiency will be highly advantageous given our diverse clientele.
Holds or is working towards WSET, CMS, or equivalent wine qualifications.
WSET Diploma, CMS certification, or equivalent qualifications will be highly regarded for Head Sommelier candidates.
Has pre-opening experience or experience launching new restaurant concepts will be an advantage.

Selection Process
All shortlisted candidates will have a formal interview with Roberto Duran (MS Sommelier), our Wine Director , during which a test assessment will be conducted to determine their current level of wine competency and the most suitable role for them.
