About the Role
K2 Operations Singapore operates Japanese fine-dining restaurants in Singapore, including omakase concepts. We are looking for a Dietitian to lead the nutritional design of our seasonal menus and to manage dietary requirement protocols for our guests across our outlets.
- Design seasonal Japanese menus with balanced nutritional composition
- Manage allergen and dietary restriction protocols for omakase service, including allergies, vegetarian and religious dietary requirements
- Analyse the nutritional composition of menu items and establish ingredient sourcing standards
- Source and evaluate Japanese seasonal ingredients, and liaise with suppliers on product specifications
- Oversee food cost, inventory control and stock management
- Ensure hygiene and food safety compliance in line with SFA standards
- Execute food preparation and cooking in support of menu implementation
- Support menu development and nutritional standards across the group's outlets Requirements
- Degree in Nutrition, Dietetics or a related discipline
- Registered Dietitian or Nutritionist qualification
- Minimum 2 years of experience in nutrition-led menu development and ingredient management within a restaurant or food service environment
- Knowledge of Japanese cuisine, seasonal ingredients and traditional preparation methods
- Japanese language proficiency required to interpret Japanese-language supplier specifications and ingredient documentation, and to liaise with Japan-based suppliers
- Able to work rotating shifts, weekends and public holidays
