We are looking for Head Baker to join our team!
Job Responsibilities
- Lead and oversee all bakery operations, ensuring consistent quality and production standards.
- Plan and manage daily bakery production for hotel outlets, restaurants, banquet functions, events, and in-room dining.
- Develop and introduce innovative bread, pastry, and bakery products to enhance guest satisfaction.
- Supervise, coach, and train bakery associates to maintain high levels of performance and productivity.
- Ensure all bakery products meet Shangri-La's quality, presentation, and brand standards.
- Monitor food costs, labour costs, and wastage to achieve operational efficiency and budget targets.
- Maintain strict compliance with food safety, hygiene, sanitation, and HACCP standards.
- Manage inventory, stock rotation, purchasing, and supplier relationships to ensure uninterrupted operations.
- Work closely with the Executive Pastry Chef, Executive Chef, Culinary and F&B teams to support promotions and special events.
- Ensure bakery equipment is properly maintained and workplace health and safety standards are adhered to.
Job Requirements
- Diploma, Certificate, or professional qualification in Baking, Pastry Arts, Culinary Arts, or a related field.
- Minimum 10 years of relevant bakery experience, including at least 4 years in a supervisory or leadership role.
- Strong knowledge of artisan bread making, pastry production, viennoiserie, and contemporary baking techniques.
- Proven ability to lead, motivate, and develop a bakery team in a fast-paced environment.
- Strong planning, organisational, and time management skills.
- Good understanding of food safety regulations, HACCP, and hygiene standards.
- Creative mindset with a passion for product innovation and quality excellence.
- Able to work flexible shifts, including weekends and public holidays.
